Behold, cheese fries! I made these with parmesan, but cheddar would be amazing as well! The catch? There is no catch. Just dreamy, crispy, salty fries with melted cheese. Oh yeah… they’re made with parsnips. Stay with me here! Just slice a few parsnips into fries, drizzle with olive oil and a sprinkle of sea salt and place on a baking sheet or stone. Pop them in a 400 degree oven for about 15 minutes on each side, or until brown and crisp. Top with your favorite cheese and pop back in the oven for about 3 minutes. This dish goes hand in hand with a rainy day and a good book!



I am intrigued, but extremely worried. I haven’t experimented much with the parsnip… one recipe, in fact, but i found it dull, mushy, and tasteless. As an avid, some might say fanatical, french fry consumer, I need to know how they compare to their potato compadres.
This is really more of a carrot/sweet potato. The ones we got were really flavorful, but they do tend to take a while to roast because of their texture.
