Fast Food! Ok, Relatively Swift Food.

I’m a bit of a salad freak. First and foremost, I love fresh food, so a salad is the perfect combination of all things fresh! Plus, what could be faster after a day of work, a quick catch-up on the DVR, working on your cook-book and food blog than throwing together a salad. In the summer I love to add local fresh produce from market and maybe something grilled. In this case the “something grilled” was chicken! Take a look at what I spent a whole 15 minutes on!

Camp Chef Meal #1 Breakfast A la Richelle

This past weekend, Dustin and I tried our luck at camping for the second time.  Those of you that know us just double checked what blog you’re reading, assuming that the words “camping” would never show up on my blog unless followed by the words “it up.”  Don’t worry though, we don’t disappoint – our version of roughing it involved a tent made for 8, a queen sized air mattress, down comforter, Kindle and books, and those fun packets of chemicals that turn your campfire rainbow colors!  Onto the food! Eggs in Purgatory – Dinner Over Easy

This has become a fast favorite in my house!

Toasted Garlic Bread on the bottom, topped with red pepper and onion mixed with marina and diced pancetta.  Top that with a fried egg.  Sprinkle with fresh basil and grated parmesan cheese. Continue reading

All Hands on Deck!

Brandi came up with a wonderful menu for the 2nd night of our stay and allowed us to assist her in the kitchen! This meal was a great way to come together after a full day of shopping and site seeing and really summed up our friendship: Laughter and food! There is nothing more personal to me than sharing food (ok, maybe a few things more personal) and when you get to share your own food with your very best friends, that’s even better! The following photos will never completely y capture the energy of the evening or the swell of my adoration for everyone in the room, but hopefully they convey just how much fun we always have when we are all together!
