So you are having a small dinner party and your comfort zone is Italian food, but your guests love Greek. What do you do? Make the same old lasagna and garlic bread? Cancel the dinner in a frustrated fit? Serve Indian? I have a better idea; Fusion! Take a look at the back of your tub of Ricotta cheese and read the ingredients. Aside from the fact that it could take all day, there are probably things in that container that you can’t pronounce much less sound like actual food. What if I told you, you can make ricotta cheese with two ingredients. Well since the cat is out of the bag, let’s get started!

During the warmer months, Dustin and I migrate every few weeks to my parents beach house in Lewes, De. At first it was a great beach get-away. Quiet, warm, salted breezes and close to downtown Rehoboth. As we began to learn more and more about our home away from home, we discovered it’s terrific restaurants and eateries. One such dinner adventure took us to a tapas restaurant called Cafe Azafran. Early for our reservation, we decided to walk the side streets behind the well known Rehoboth Boardwalk. That’s when we saw it. Just sitting there. Like a mirage in the desert. I ran to it, arms outstretched, mouth open. Cue slow motion run. In front of me was the simplest of windows.
Touch of Italy is a tiny Italian deli, bakery and grocery store, all wrapped up (presumably in prosciutto) into one. We finished our walk, made it safely to our tapas dinner and went back home. We decided recently to return to the Italian deli for lunch. Hanging about the cases of meat, cheese and olives were sandwiches simply displayed and described. Before I get to the sandwich, let’s take a look at what the great folks at Touch of Italy have to offer.

I chose the number 5. But who cares what it looks like on the menu, LET’S SEE THE SANDWICH!
And there it is. The bread was fresh and the smoked mozzarella was fresher! The pungent meat was balanced perfectly by the soft, pillowy, smokey-bland mozzarella cheese. It’s construction was simple but the flavors were sublime! I urge anyone that finds themselves walking the Rehoboth Boardwalk this summer, to take a little side treck down 1st Street to Baltimore Ave. The address it 33 Baltimore Ave Ste A, Rehoboth Beach, DE 19971-2156.
